Chicken with Avocado and Mozzarella Cheese

Hello there!
As promised, I would share some of my photos from one night of making dinner,
so here it is!
Let me just say that it was mucho deliciouso. ;)

Avocados are great on almost everything and are really healthy for you.
Plus, cheese goes good with anything, so therefore it just added more to the chicken.

Here is what you will need:

2 Chicken Breast Fillets, halved lengthways
1/2 Cup Plain Flour
2 Tablespoons Fresh Milk
2 Eggs
1 1/2 Cups Dried Breadcrumbs (we used a lot more than this)
(we used whole wheat breadcrumbs and it was delicious!!)
2 Tablespoons Olive Oil/Cooking Spray
1/2 Cup Tomato Pasta Sauce
Avocado, Sliced
1/2 Cup Grated Mozzarella Cheese 

This can be paired with a salad or whatever side you love to have with chicken.

Instructions:

  1. Preheat oven to 400°F.  Wrap chicken in plastic wrap and pound thin (until about 1/4 " thick) or thin chicken with a rolling pin.  
  2. Whisk milk and eggs together.  Put flour and breadcrumbs on two separate plates.  
  3. Put chicken in flour first and shake off any excess.  Place chicken in egg mixture making sure entire chicken is covered.  Let excess drip off.
  4. Place chicken in breadcrumbs, being sure to put on enough to cover entire chicken (I would even put extra on to make it extra crunchy).  
  5. In a 9"X 13" baking dish, lay down a piece of tin foil to cover the entire bottom of your baking dish.  Place chicken on the foil.  Drizzle olive oil on chicken.
  6. Bake for four minutes on each side, being sure it is four minutes for each side for an even golden touch to the chicken. Remove chicken from oven.
  7. Add tomato pasta sauce, avocados, and cheese to the chicken.  Bake for another 5-7 minutes (we did about ten minutes total after we put on the avocados and stuff just to be on the safe side).  
  8. Enjoy your yummy chicken! :)


Looks great, doesn't it!  This has been a family favorite for years!
